Unripe Plantain Recipe using our Jollof Sauce!
Ingredients
- 300ml Jollof Sauce
- 2/3 whole unripe plantain
- Vegetables of your choice chopped
- Chilli (Optional)
- Basil or Sent leaves for garnish (Optional)
Cooking Instructions
- Peel and chop up your plantain into 1-2cm cubes and add to a pot.
- Empty the jar into the pot, you can rinse out the jar with a little water to ensure you are using all the content of the jar.
- If using additional chilli, add now, mix gently, put on low heat and let simmer for about 10 – 15 mins or until the plantain is cooked stirring occasionally to ensure it doesn’t stick to the bottom of the pot.
- Turn off the heat, mix well garnish and enjoy!
Note
For this recipe, we have used peas, sweet corn and carrots. You can also use some beans if you’d like or anything else you would normally. Serve with Spaghetti or your choice of pasta.
